Curry Chicken

1 to 1?lb pack boneless chicken breast, curry powder, 16 oz container sour cream, 1 cup honey-roasted peanuts
Cut up chicken in pieces and boil until thoroughly cooked. Chop honey-roasted peanuts in food processor, put aside. Shred cooked chicken in food processor. Combine chicken, chopped peanuts and enough sour cream to make a creamy mixture (8-16 oz sour cream) in a pot and heat up mixture, adding curry powder to taste. Serve over rice dish below. Side Dish:4 cups water to two cups converted rice, bring to boil and add 1 tablespoon butter and ? teaspoon of curry powder and cook till done. Have this cooking while preparing chicken. Another tasty side is Goya Arroz Curry, curry rice with carrots and onions.
Spicy Vegetable-Beef Stew
1 to 1? pound chuck roast, 1 large onion, coarsely chopped, 1 large potato, cut into chunks, 15 oz can tomato sauce, 16 oz jar of Chi Chi's hot Chunky Salsa (relax: it'll be
diluted and won't make the stew too spicy), 2 bags frozen mixed vegetables (can be whatever mix you like best), tsp garlic powder, 2 tsp basil, ? tsp thyme

n a large stew pot or dutch oven, place meat in just enoughwater to cover it, add the whole jar of salsa, the chopped onions, basil, garlic and thyme, mix, and cover and cook the meat for around two hours on low boil, adding water as necessary to keep meat covered. After about an hour and a half, add potatoes and cook for 30 minutes more. After two hours, take out meat, and with a fork, shred it, returning meat shreds to the stock and mix well. Add tomato sauce and vegetables, stir, and simmer for 15-20minutes to cook vegetables (check bag for cooking time on veggies).

Cheezy-Eazy Tuna Macaroni Surprise

2 cans chunk light tuna in water, 1 medium onion (chopped fine in food processor), broccoli crown (chopped fine in food processor) (use  cup), cup mayonnaise, 1 tsp garlic powder, 1 tsp basil, Tabasco Sauce (optional), 1 box Macaroni and Cheese mix
Prepare Macaroni and Cheese mix according to directions (adding a couple of dashes of hot sauce to cheese as you mix it in). While macaroni is boiling, prepare tuna salad by draining tuna, and mixing it with onions, broccoli, basil, garlic and mayonnaise. Add tuna to hot Shells and Cheese and mix thoroughly to make
a warm, slightly spicy dish which makes a good left-over when cold or nuke it (moderately!) to warm it -- do not serve this overly hot.
Taco-Turkey 'Meat'loaf

2 pounds ground turkey, 2 eggs, 2 packs McCormick's Taco seasoning mix, 8-10 oz nacho cheese corn chips crushed to coarse crumbs, 16 oz jar Chunky Salsa (Old El Paso or Chi Chi's) medium to hot depending on taste

Preheat oven to 350 degrees. Mix ground turkey, eggs, Taco Seasoning mix, and Nacho chip crumbs and 10 oz of salsa. Grease standard loaf pan with olive oil and fill with turkey mix, shaping a shallow trough in the top and spoon a couple of ounces of. Salsa into it. Bake at 350 degrees for 45 minutes or so until top starts crisping. Note: Unlike a meatloaf made with ground beef, there is no need to drain any fat from this dish during cooking.
Side dish Goya Arroz Mexicano rice mix prepared as per directions, and mix in
whole kernel corn to get a real good side dish.
